Die andere Seite der Topinambur / The other face of the Jerusalem artichoke

Andy Vorbusch: Topinambur-Schaum und Getreide-Eis

Beim Probieren von Topinambur kam es uns so vor, als habe diese Knolle noch ganz andere Geschmacks-Noten als die bekannten, beispielsweise auch Noten von der Banane. Dann vakuumierten wir Topinambur mit Milch und Zuckersirup und stellten fest, daß durch den Austausch an Aromen die Milch nach Cornflakes schmeckte. Diese Getreide-Noten mußten von der Topinambur kommen.
 
Das brachte mich auf die Idee, ein Dessert in Richtung Frühstück zu entwickeln, statt mit Cornflakes in der Milch jedoch mit Topinambur.  Ergänzt wird die Topinambur-Milch durch verschiedene gepoppte Getreide, Blütenblätter und Stückchen von gefriergetrockneter Himbeere. Die Röllchen obendrauf, die manche Gäste für Kokos halten, sind eingelegte Stückchen von Topinambur.

Vertieft wird das Getreide-Thema durch ein Buchweizen-Eis auf gepopptem Getreide. Als „Stör-Komponente“ wirkt ein Rübensirup-Chip, der mit seinen malzig-herb-bitteren Noten stellvertretend für den Kaffee im Frühstück steht.

Tasting Jerusalem artichoke we got the impression that this bulb has more notes than those well-known, we decteted for example banana notes. Then we put Jerusalem artichoke with milk and sugar syrup into a vacuum bag for an infusion. As a result of the aroma exchange the milk tasted of cornflakes. These cereal notes must have come from the Jerusalem artichoke.

This prompted me to develop a dessert with the subject of a breakfast but with Jerusalem artichoke in milk instead of cornflakes. To the Jerusalem artichoke I added puffed cereals , blossom leaves and pieces of freeze-dried raspberries. The small rolls on top of the dessertinterpreted as coconut by many guestsare marinated slices of Jerusalem artichokes. The cereal theme is pursued by a buckwheat icecream on top of puffed cereals. The brown chip is made of treacle as a substitute for coffee with its malty-austere-bitter notes and works as a kind ofdisruptivefactor.
